Clean Eating on the Cheap!
My friend Suzanne came up with a recipe that quite frankly, if you're one of those persnickity peeps, you probably won't try. I, as you will come to know, will eat just about anything. God forbid I'd miss out on something yummy. I'm like this in every aspect. I'm nosy and want to know what's going on and if I don't know something about a topic I look it up. Probably why I work in a 911 Center. Yes I know, irritating and yet, I'm loved. LOL. Anyway back to this dish....Suzanne and I worked together and before she moved away I saw her literally shrink before my eyes eating this stuff. It smells phenomenal and it tastes even better! SUPER easy to make, cheap and filling. The one thing I have a problem with while trying to lose weight or eat more healthy is that if I'm not full I naturally want to eat more. Well let me tell you, this dish fills you up. It's a great meal to have on hand and just scoop out a cup to have for lunch and the ingredients you can keep on hand all the time. Now, I know it's better to make with dried beans that you cook yourself, less sodium and certainly they taste better, but if you're in a rush for time canned works just fine. Suzanne Special
1 Lb Ground Turkey
1 Can or 16 oz. of Garbanzo beans
1 medium to large Onion, diced
1 Red or Yellow Pepper, diced
2 cloves Garlic, minced
1 tsp Oil
Salt and Pepper to taste
Parsley
Saute the onions, pepper and garlic in the oil. Add the ground turkey and brown. Add the can of beans, including the juice. Salt and pepper to your taste and add parsley for color. I eat this in one cup servings and it's very filling!
