Hot Wings With a Twist

So, my brother in law retired from the Sheriff's Office after 30 wonderful years of service and I was asked to help with a finger food for his retirement party. It was a floating party which meant it would span a couple of hours with people coming and going at their leisure and keeping something hot was going to be a problem. I was trying to think of something different but familiar and came up with the flavor of a hot wing, every man's favorite, but in cold, non-messy, finger food form. Thus, my Hot Wings With a Twist were born. I wanted the classic flavors of wings you would get at a sports bar including the celery sticks and blue cheese or ranch dressing. I used pre-made phyllo dough pastry cups that you find in your grocer's freezer section.

The filling is made by boiling 5 boneless, skinless chicken breast in salted water. When done let them cool. Put them in a food processor and pulse a couple of times or chop until fine and put it all in a large bowl. To the chicken add 1/2 cup mayonnaise and a bottle of your favorite wing sauce. (I used Sweet Baby Ray's)

Add 3 thinly sliced green onions. Season with pepper and add parsley for color.

Scoop into the phyllo cups and top off with a thin slice of celery. Serve with blue cheese or ranch dressing.
